At Bon Appétit Management Company we are committed to two things, great food and outstanding service! At Bon Appétit you won't find our managers referring to a corporate recipe book or our chefs microwaving the lunch special. We do not have standardized recipes or central commissaries, instead, our chefs and managers are expected to stay abreast of current culinary trends and bring cutting edge food into their cafes. We have 2 Executve Chef positions open in two different restaurants within walking distance of each other. You will be responsible for overseeing all culinary functions for two very high profile Bon Appétit accounts at The Presidio. You will manage and lead a team of associates and oversee all safety and sanitation as it pertains to the account.


Location #1 -


The Commissary is offered by the Presidio Trust and award-winning chef Traci Des Jardins, in partnership with Bon Appétit Management Company. Its Spanish-influenced California cuisine is driven by sustainable, locally-sourced ingredients. It also features a mercantile with artisan goods, from batch jams to local cheeses, as well as bottles of wine. It is located in the heart of the Presidio, and fittingly housed in the former mess hall of iconic streetscape known as the Montgomery Street Barracks. Built in 1895 and known colloquially as “infantry row,” the Barracks are adjacent to the beautiful Main Parade Ground. The restaurant pairs authentic Presidio elements – such as lighting fixtures reclaimed from a historic Army gymnasium and Douglas Fir table tops fashioned from salvaged wood – with a comfortable, contemporary design. Most seating at The Commissary is communal. The restaurant also offers limited traditional and bar seating, dining on the shaded front porch, and “front row” seating surrounding an open kitchen where guests can watch the chefs in action. The Commissary is a destination unto itself or a wonderful place to enjoy a meal during a day in the park. Chef Traci Des Jardins’ name is synonymous with uncompromising excellence in food, wine, and hospitality. She runs a diverse group of restaurants, which, all have received critical acclaim from local and national publications, including the James Beard Foundation, Esquire Best New Restaurants mention and San Francisco Chronicle's Michael Bauer's Top 100 Bay Area Restaurants.


Location #2 -


Arguello is located in the historic Presidio Officers’ Club as a multifaceted cultural destination. It features Mexican cuisine capturing the cultural heritage of the Presidio and a contemporary bar with craft cocktails. A heated patio provides a comfortable way to enjoy outdoor dining in the Presidio and features accents that connect today’s experiences to the historic Presidio, including an outdoor comal (griddle) for tortilla making. The restaurant is named after Luis Antonio Arguello, who served as commander in the Presidio from 1806 until 1822 when he became the first Mexican Governor of Alta California.


Additionally, as part of the culinary team, you will be responsible for the following:

Responsibilities:



  • Manage cost controls and control expenditures for the account.

  • Plan and create unique menus for brunch, lunch, dinner, and catering events

  • Purchase and manage inventory.

  • Roll out new culinary programs in conjunction with Bon Appetit’s marketing and culinary team.

  • Enforce food quality throughout the entire dining account.

  • Hold staff meetings for food safety, quality issues and innovations.

  • Provide seasonal menu items for Catering Department.

  • Ensure the vision and proper food programs are consistent through audit checklists.




Qualifications:



  • Culinary degree preferred.

  • Five plus years of culinary management experience with teams including both salaried and hourly employees.

  • Multi-site (multi-kitchen) operational experience

  • High volume production and catering experience is essential.

  • Previous experience managing cost controls.

  • Desire to learn and grow with a top notch foodservice company.
